I just discovered the easiest and most versatile paleo and Whole 30 complainant dish- zucchini boats! I cannot get over how easy and tasty they were; you can get really creative with your filings.
I think the secret is to bake the zucchini "boats" and filling separate. For my first attempt I did a simple beef (grass fed, organic), onion, tomato, bell pepper, and seasoning combo for the filling.
To make the boats:
- Preheat oven to 400 degrees
- Cut the ends of the zucchini, then cut lengthwise, place cut side down on a baking sheet. Brush with olive oil and salt and pepper. Bake for 15 minutes (depending on how tender you like them)
- make filling while boats are in oven. I just cooked up some peppers and onion, then coked up the beed. Added the pepper mixture and tomatoes to the beef.
- pull the "boats" out of the oven and fill with the beef and veggie mixture and serve
You can get very creative and the filing options are endless!
