Easy Lemon Sorbet

This easy, 4 ingredient lemon sorbet will take you no time to make! I was excited to use one of the gifts from my bridal shower. I already had all of the ingredients on hand and followed the recipe in the booklet that comes with the Cuisinart Ice Cream & Sorbet machine. 4 Ingredient Lemon Sorbet
serves 10, 175 calories per serving

3 cups of water
2 cups sugar
3 cups lemon juice
2 tablespoons of lemon zest
pinch of salt (up to you)

1. Prepare a lemon simple syrup with the water, sugar and 1 1/2 tablespoons of the lemon zest by combining all 3 in a medium saucepan set over medium-low heat. Cook mixture until the sugar is fully dissolved. Remove from heat.

2. One the simple syrup is ready,  add the pinch of salt. Let the mixture steep for 30 minutes. Stir in the lemon juice. Cover and refrigerate 2 to 3 hours, or overnight.

3. Strain the chilled mixture. Turn on the ice cream maker; pour the mixture into the frozen freezer bowl and let it mix until thickened about 15 to 20 minutes. When the sorbet is almost done, add the reserved zest through the opening in the top and let it churn until combined.

The sorbet will have a soft, creamy texture. If a firmer consistency is desired, transfer the sorbet to an air-tight container and place in freezer for 2 hours. Remove from freezer about 15 minutes before serving.
